Tzatziki Sauce Dairy Free

2 cups raw cashew pieces Water, to cover cashews
1 cucumber, peeled and shredded fine 4 tablespoons lemon juice
1 teaspoon granulated garlic 1 teaspoon granulated onion 1 teaspoon herbamare
1 teaspoon salt
Boil cashews in water, rinse and drain. Place in blender with just enough water to cover, blend
until smooth.
Add remaining ingredients, chill and serve.
South West Stew
Servings 6-8
2 15 ounce cans black beans, canned 4 cups frozen corn
2 15 ounce cans crushed tomatoes
1 15 ounce can diced tomatoes with green chilli 1 large onion, diced
2 cloves garlic, crushed 2 teaspoons cilantro
1 teaspoon cumin
1 teaspoon chili powder 1 teaspoon salt, optional
Sauté onions until te der. Add the rest of the ingredients and cook until
well heated through.

Pecan Oat Burgers CP Style
Servings 25

8 cups water
3/4 cup Bragg’s Liquid Aminos 1 cup pecan meal
1/2 cup nutritional yeast flakes 1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon Italian seasoning 1 teaspoon coriander
1/8 cup chicken like seasoning 2 cups onion, chopped
8 cups quick cooking oats Preheat oven to 350 degrees
in very large stock pot add all ingredients except the oats Bring to a boil
Add oats, mixing well

Turn off heat and let stand until mixture becomes firm but not cold, stirring every few minutes

Scoop and pat into patties

Bake for 15 minutes, turn over and continue baking for 10-15 minutes Serve as burger patties or
with gravy as a casserole.

Jane’s 3-2-1
Servings 6

3 tablespoons balsamic vinegar 2 tablespoons mustard
1 tablespoon maple syrup, or date syrup Whisk all ingredients together
Serve as salad dressing.

My favorite balsamic vinegar is a white cranberry pear.

G-BOMBS Easy Bean Salad
Servings: 20
Original recipe from The Cancer’s Survivor’s Guide

1 1/2 cups kidney beans, or one 15 oz can 1 1/2 cups pinto beans, or one 15 oz can 1 1/2 cups black
beans, or one 15 oz can 1 1/2 cups cannellini beans
1 cup Edamame 1 cup frozen corn
1 large red pepper, diced 1 can mushroom pieces 1 medium red onion
3 cups baby arugula
2 teaspoons pumpkin kernels Dressing
6 tablespoons Cranberry Pear White Balsamic Vinegar 4 Tablespoons mustard
2 tablespoons date syrup

Combine all ingredients except dressing ingredients in large bowl, mix gently. Combine dressing
ingredients and add to salad, mixing well.
Serve on a bed of baby arugula, topped with Pumpkin kernels.

Serve cold or room temperature. Can use any cooked or canned beans for variety.

Fake Feta
Servings: 8
Yield: 2 cups

1 package tofu, water packed extra firm crumbled 1/2 cup lemon juice
1/4 cup water
2 tablespoons olive oil 1 tablespoon dried basil 2 teaspoons salt
1 teaspoon onion powder 1/2 teaspoon garlic powder

Drain water off tofu. Tofu needs to be as dry as possible,. Crumble to desired size.

Whisk remaining ingredients together in a bowl.

Add tofu to other ingredients in bowl. stir, refrigerate at least an hour or over night.

Almond Joy
Servings: 24

1 1/4 cups almond flour
1 1/4 cups macaroon coconut unsweetened 1/4 cup date syrup
1/4 cup coconut cream unsweetened, sugar free 1/4 cup chocolate chips, dairy free

Combine almond flour coconut date paste, and coconut cream with gloved hand until it forms into a
firm dough.

Scoop on to a pastry sheet covered tray. Drizzle with melted chocolate chips.
I like to melt my chocolate chips in the microwave slowly, then spread on top of Almond Joy’s
evenly. I keep them in the freezer and eat them semi tempered.
